This is a temporary 6 - 15 hour a week position. (Depending on department need)
General Summary

Prepares a variety of menu items for Children's Hospital Patient Room Service, Cafe/Diner and Catering. Follows standardized recipes, daily production sheets and Catering requisitions. Follows department policies to ensure high level of food safety and sanitation. Contributes to Continual Quality Improvement of products, procedures and environment.

Principal Duties and Responsibilities

1. Food Production: Prepares cold food items including, but not limited to, Salad Bar ingredients, fresh fruit related items, various compound or "side" salads, sandwich fillings, sliced deli meats and cheeses, desserts, muffins, cookies and other related items. Prepares hot food items such as, but not limited to, Breakfast, Lunch and Dinner menu items for Patient Room Service, Cafe/Diner and Catering. Assists in the preparation of pre--portioned, make--ahead bulk items for Patient Room Service menu.

2. Follows standardized recipes and daily production sheets and accurately record amounts produced. Delivers all food items prepared to designate serving area in an established timeframe and at the required temperature.

3. Comprehension of weights measures, recipe conversion and portion control to minimize waste. Adequately completes next day's preparation assignments. Routinely tests food for quality, appearance, flavor, temperature, texture, color and doneness.

4. Follows established guidelines, recipes and procedures for age--specific feeding and specialized diets including but not limited to Diabetic, Ketogenic, BMT, Sodium Restricted and Low-Fat. Assists in the preparation and execution of patient-related food service such as Bader-5 buffets, Child Life functions and Community Suppers.

5. Fills in for Senior Cooks and Patient Cook during breaks. Assists in the preparation of Cafe evening menu items with products prepared by Senior Cooks. Fills in for Patient Cook during vacations.

6. Follows and monitors H.A.C.C.P. food preparation and storage procedures. Follows department policies and procedures for hand washing, hair restraints, cooling/reheating foods and taste testing.

7. Stores, holds and transports cold food items at 40--F or below and hot food items at 140--F or above. Tests food temperatures with approved food thermometer and records in log.

8. Wraps, labels and dates all food items and stores in designated area in an organized manner. Follows F.I.F.O. principle of food rotation.

9. Cleans and sanitizes all food contact surfaces and equipment after every use to avoid contamination. Records ppm of sanitizer solution in designated log. Avoids cross--contamination from raw to cooked and ready to eat foods via hands, equipment, utensils and cutting boards.

10. Maintains high levels of sanitation of all equipment by adhering to department policies and procedures, Health Dept. codes and J.C.A.H.O. regulations

11. Follows department safety standards to minimize hazards and work--related accidents.

Minimum Knowledge and Skills required by the Job

* Work requires the ability to read and understand written instructions and six to twelve months of previous experience
* Work requires the skills to read and understand instructions add and subtract numbers, and make comparisons between numbers and letters.
* Work requires the ability to understand and respond to simple written or verbal instructions. Incumbents must respond appropriately to instructions, questions or requests for information. Work occasionally requires contact with patients and/or visitors which involves courtesy.
